This pale, straw-coloured ale is named for the German city of Köln, and is a protected designation for those beers brewed only within that city. Kölsch-style beers are fermented with a special ale yeast that tolerates cooler temperatures, and is traditionally given a long, cold aging period like a lager, which makes for a very smooth and clean beer. The finished product is typically carbonated to a degree that is spritzy and invigorating. Our choice of hops aim for a bittering charge with hints of mint, pine, and delicate spice, finishing with a balanced, fruity, spicy and floral character. Somewhat akin to your favourite lawnmower beer, but more..."refined."

Note: this is a prototype recipe at this point that we hope comes close to the original; please brew with that caveat in mind and try to sample your finished product side-by-side and shoot us some feedback! We'll iterate the recipe as much as we can, as often as is necessary.
