Product Details

Pectic enzyme is a protein that works to break down pectin in fruit, thus avoiding "milky" pectin haze in the finished product. Very useful when added directly to crushed fruit to aid in juice extraction, especially grapes, apples, pears, etc.

Usage rate: 1/2 teaspoon per gallon of juice prior to start of fermentation.
